In order to bring all the flavours of an excellent cold cut to the palate, meats must be prepared no later than two hours after slaughter. How do we know this? Because we prepare each and every product in accordance with this procedure. There’s no shortage of experience and top quality ingredients. Add salt, pepper and the time it takes for curing to obtain the very best from meats.
Salamis are tied by hand with coarse linen string in accordance with tradition, under the expert supervision of ElleEmme professionals.
